How to run the test

  1. Make two identical pies with pepperoni and vegetables — deliberately the worst-case, wettest combination on your menu.
  2. Make one your regular way. Make the other with a moisture absorbent under the toppings (this is where Krisp-It goes in our version of the test).
  3. Box both pies and close the lids. No peeking. Leave them for at least 30 minutes.
  4. Open both boxes side by side and grade them like a customer would.

What to grade

  • The bottom of the crust. Lift a center slice. Is the underside dry and firm, or soft and translucent with grease?
  • The box floor. Grease and water spread across the bottom of the box is moisture that came out of your pie.
  • The first bite. Crisp resistance, or fold-over flop?
  • Cheese position. Did the cheese stay anchored, or slide when the slice came out?
  • The lid. Heavy condensation means steam was cooking your crust the whole ride.

Reading your results
